So I decided that I would cook by my lonesome this weekend and try out a recipe for something that isn't quite so french. Since my dear friend Leigh is continually telling me of the joys of cooking with coconut milk I decided I needed a recipe to test it out! Shrimp is always a tasty options and I happened to stumble upon this recipe on Food&Wine's wessite, fate had once again stepped in and guided my food feet. OK not really i bought shrimp and coconut milk at the walrousmart and looked for a recipe to use for them. Inevitably I did not have all of the necessary spices so I had to sojourn out into the world again and acquire the needed supplies.
So after driving to the store and returning home so far the only time I said fuck was when I found a rather large grasshopper in the back seat of my car as I was vacuuming it out. Despite my best efforts I could not remove the insectoid invader from my backseat so I relinquished my control over those realms and focused on getting home without being attacked by any other bugs that might be hiding in my car. (I knew I shouldn't have left my car windows open despite the lovely weather.)
I managed barely to make it back to the house in one piece you cannot imagine how dangerous insects can be when in enclosed spaces with vulnerable gay men. It isn't a fair match I will tell you that much!

Back the the fucking food. So I arrived at my abode and unpacked my ingredients and prepped the required items (the onions garlic and spices) arranging everything in lovely bowls so they would be generally more photogenic than typical ingredients. You cannot imagine how much ingredients improve in appearance and flavor after just being put in an attractive bowl right before use! It is quite amazing try it out sometime! So after I prepped I fixed the rice to go with the meal I used vegetable stock instead of water for flavorful rice. Because I am a schmuck I cannot cook rice on a stove top because of this I have to use my dangerously dirty microwave to cook the rice and I have had great luck with that the rice generally comes out quite perfect.
I believe it took about 20 minutes to cook because that is how long the rice takes to cook and I was finished with the shrimp at around the same time as the rice. I was quite pleased with the result it was a very flavorful dish and I had to say a few expletives because it was just so good! I urge you whomever you are to try it try it for all the little people out there who cannot eat shrimp eat it and tell them how delicious it was and make them cry because they cannot have any! I will leave you with a photo of the finished product happy cooking and don't fuck around in the kitchen unless you have put away all the knives cuts in your groin and buttock region are painful!
